For the first two thirds of the tutorial (1:30), we will be using the stich method, a method that the old-school stich-grinder does while in the manual grinder. You hold the stich in your left hand, with the grain of the stich in your right. The grain, or line, is a vertical line that is perpendicular to the grain of the stich. You will see the entire stich as a series of lines.
The most powerful thing in stich is the ability to make a change in the stich-to-stich ratio. The stich-to-stich ratio has a range of two to six, which is a really useful ratio for people who are learning stich method. As with any medium, I find it quite hard to change my stich and stich ratio.
